With the growth of the world’s population and the increasing awareness that our natural resources are limited, development of sustainable systems to produce food is essential. Globally, the food industry is one of the largest industrial sectors, consumes tremendous amounts of energy and water, and can result in large quantities of waste; thus food has a critical impact on the environment, including greenhouse gas emissions and climate change.

Historically, the criteria for food choice amongst consumers has been based on taste, price, availability, quality, and nutritional attributes; however, evidence now suggests that consumers are increasingly interested in the environmental impact of foods. Students will learn about these issues (both in the US and in France), and they will have many opportunities to experience French cuisine and French culture as related to food, and will obtain different perspectives in terms of diet, food production, food preparation, food consumption, and the major role of food in French culture. Students will also be immersed in French history, and will understand how cathedrals and castles have been, and continue to be, key to French culture and cuisine.

Tour the farms and regions of Germany and Austria to learn about international opportunities and guidelines in related equestrian events such as jumpers, eventers and western all-around horses.

Touring the Austrian and German riding associations enables students to compare and contrast American versus European techniques, governance and styles.

Cultural visits and stallion stations include: Castle St. Martin, Vienna, a city tour of Nightwatchman in original dress from the old days in Dresden, the Dresden Racetrack, dinner on the River Elbe, visiting Meissner Porcelan, and State Stud Moritzburg. The tour will end in Munich visiting Kz Sachsenhausen, Vet clinic, Brandenburger Gate , House of German Parliament - Reichstag, the Wall, Checkpoint Charlie, and the state stud Neustadt Dosse.

The Edinburgh & London trip during Spring Break 2025 will offer an opportunity to explore the history, government, economics, and agriculture of two constituent countries of the United Kingdom (Scotland and England), as well as the economics of European integration and the recent exit of the UK from the European Union. During the class time prior to the trip, students will discuss the recent history of the UK's relationship with the rest of the European continent with a focus on the motivations for Brexit and the resulting impacts of the UK leaving the EU.

The visit to Scotland will provide an opportunity to understand regional tensions within the UK, while the visit to London will provide an opportunity to explore a major world metropolis whose growth and prosperity are intimately linked with international trade and globalization. The trip will also offer opportunity to visit farms in Scotland and England.

3 credits of ECON 4960 during the spring 2025 semester.

Service Learning Trip to Uganda - Spring Break 2025

This spring break service learning program to Uganda will offer students the opportunity to become familiar with the ISU programs and enable students to directly contribute to improving the quality of life of the people of Kamuli, particularly women and children. Students will spend several days working at primary schools and with local communities in the Kamuli District on agroforestry - establishing woodlots, creating school gardens, working with mothers and children on nutrition and health at Nutrition Education Centers, with livestock farmers on feeding and housing, and with post-harvest handling programs on food preservation and storage at schools.

The “Empowering Future Leaders in Sustainable Development Through Service Learning in Uganda” program is designed to provide students with a unique opportunity to experience and contribute to a sustainable development project through a service learning experience in rural Uganda. This is an outstanding opportunity for students to live and work cross-culturally with Ugandan students from Makerere University.

Hear from the participants of the summer 2024 program on Thursday, October 10th at 3:40pm in 1204 Kildee Hall. Students will share about their experiences from this past summer and what projects they worked on in Uganda!

The “Empowering Future Leaders in Sustainable Development Through Service Learning in Uganda” program is designed to provide students with a unique opportunity to experience and contribute to a sustainable development project through a service learning experience in rural Uganda. This is an outstanding opportunity for students to live and work cross-culturally with Ugandan students from Makerere University. Students will develop leadership skills through team-oriented teaching along with development and implementation of projects at schools in rural communities in the Kamuli District.

Students will travel to Kamuli, Uganda for approximately 6 weeks (end of May-early July) and live at the Mpirigiti Rural Training Centre, an ISU satellite campus. Students participate in cultural experiences including a visit to a national park and lessons on traditional dancing and drumming, assist with teaching in elementary schools, work in school gardens, implement team projects that benefit schools, and engage with and learn from local farmers and community members. Areas of emphasis for team projects typically include: agroforestry, beekeeping, irrigation, school lunch programs, post-harvest loss mitigation, poultry husbandry, and sanitation and hygiene.

This integrated production and policy program will allow students to gain valuable knowledge, skills, and abilities with respect to global agricultural production, resources, and food issues. Students will combine coursework conducted at ISU and on-site work with professional teams in Rome to explore real-world projects focused on global food and agriculture issues. Students will work with United Nations Food and Agriculture Organization (FAO) professionals. Students will present their findings to FAO at the end of the program. Students will, at the end of the program, enhance their thinking while working in a high-functioning team environment to evaluate complex issues associated with global agriculture and food issues like biodiversity, foreign food aid, food security, food safety, environmental/resource conservation, global economy and the role of the US and the UN in these issues.

GLOBE 495 spring course will be offered Tuesdays and Thursdays 3:10-5:00 pm. All students must pass this course to participate in the GLOBE 497 course for the summer.

Although the Netherlands is only 1/3 the size of Iowa and is has 5 times as many inhabitants, the Netherlands is the second largest exporter of agricultural products in the world, next to the US, which includes a large livestock sector. So one of the main purposes of this study abroad course will be to gain an understanding of how such a small country can have such extensive livestock production and what the implications and considerations of this are with regard to the environment, sustainability, and acceptance by society. The program will include dairy and animal production, processing, sustainability, and automation in animal agriculture, as well as cultural and historic venues of the Netherlands.
